Tabletop Trends: Banqueting special: tableware

Banqueting is all about thinking big. Like fine dining it is all about creating an impression, but the logistics of serving many people simultaneously mean that there are different considerations when choosing equipment. Obviously aesthetics are key for creating the right atmosphere but durability is much more important than for fine dining. When you have to routinely serve a lot of people at the same time you need tableware that can handle slightly rough treatment, and can cope with intensive regular washing. Ease of storage is another consideration, so making sure your tableware is stackable and in a range of standard sizes helps to keep the logistics ticking along smoothly.

 

It’s also worth considering adjusting or optimising the size of your plates in order to maximise the amount of guests that can be seated per table. For example, choosing coupe or slim-rim plates over more traditional wide rim designs allows for the use of overall smaller plates without compromising on the available space for food presentation.

 

While the classic white serve is still the standard for most types of dining, it’s important to consider how the tableware choice builds on and contributes to the overall style of the banqueting location. If you’re aiming for a very traditional fine dining look and feel, choosing tableware with classic shapes and elegant detailing is the perfect complement, while a minimalist look pairs well with more contemporary styles.

 

Despite the specific requirements for banqueting, it is still driven by many of the major tableware trends popular in other foodservice sectors. Neutral shades and natural textures are currently popular, and are often combined with statement pieces and bold splashes of colour to accentuate and add interest to the overall presentation. This could involve mixing and matching different collections and different materials.

 

Wood and bamboo have seen increased interest in recent years. The trend for metalware also remains as strong as ever, especially for large statement dishes for sharing or buffet style banqueting. Stainless steel is also popular, particularly with different finishes and patterns that allow it to fit in with wider themes.
